This past weekend my cousin Mandy had her graduation party.  In our family it is tradition that on your special day (birthday or graduation) you get to decide what the meal will be.  Mandy decided that she was tired of the normal tri tip BBQ and wanted Sloppy Joes instead.  She also decided that she wanted me to come up with a recipe that had a little more pizazz than normal Sloppy Joes, so after a few experiments and an expert taste panel, the recipe for Mandy’s Sloppy Joes was created.  Keep in mind that this recipe was designed to feed nearly 100 people so feel free to use it for your next family gathering, banquet or appreciation dinner.  To fix for a crowd simply multiply all ingredients by 10, for a recipe that will serve approximately 100 people.

Mandy’s Sloppy Joes
3 lbs ground beef
1 small bottle of original BBQ sauce
1 small to medium yellow onion
1 green bell pepper
1 jalepeno
1 small jar spicy tomato sauce
Buns & Cheese of your choice

Begin by cutting the vegetables.  Chop up the peppers and onions fairly fine.  (These pictures are from cooking for the party, so the quantities look massive!)

Next brown the ground beef and add the vegetables so that they can reduce as well.  Next drain off the excess fat, when cooking with large quantaties this is very important.  Next add the BBQ sauce, and tomato sauce. Let this simmer until it thickens up a bit.  Serve on a bun with cheese if you choose.

1 green bell pepper- $0.62
1 Jalepeno- $0.45
Spicy Tomato Sauce- $0.68

Total Cost – $17.24 (Serves 10)
Cost Per Plate- $1.72
